Description
I'm on a three monitor setup, one 1920x1080, and two 1900x1200. Gnome on Oracle Linux 7.5.
When Moving the Virtualbox Manager to the (slightly) higher resolution screen, the font size shrinks drastically.
In addition, the menubar elements attached to guest machines ('File Machine View Input...') also become extremely small.

I have the same problem in Ubuntu 18.10, but both of my screens are the same resolution (1920x1080). Strangely, the problem is only on my larger monitor. If I drag it to my smaller monitor the font is correct, so I think the interface is getting some DPI information from the monitor and shrinking the font.

I am seeing this now on a Dell 7400 running Linux. I have two external screens, but the GUI rather dramatically becomes unreadable if I place it anywhere other than the laptop panel. Is there a scaling adjustment for the GUI similar to that for VM windows? Or could it be a bit more adaptable to differing pixel densities?

I think my observation is that VBOX uses the QT default settings of the underlaying OS, you can change those font-settings by installing 'qt4-qtconfig' and/or 'qt5ct' packages.
